The
alpujarreña’s kitchen is based on the variety and wealth of Earth products,
such as fruits and vegetables, cereals, choto, almonds, maize, garlic,
hinojo, honey, green bean. One is a simple, natural and flavorful kitchen,
with a great variety of native plates of quality that make the
alpujarreña’s gastronomy an attractiveness in itself for the ones who
approach the region in general. The typical dish from the towns are the
pot of hinojos, gachas of "garlic cuemao" and gachas of broth colorao,
guisaillo matancero, the potaje of chestnuts, the doughnuts... and great
variety of exquisite candies of morisco origin. Next to these native
dishes the pig is an emblematic product, the popularity of the rite of the
slaughter in the Alpujarra shows its importance in the ham’s production
and Earth’s sausage.
